Crepe Making


For Bijou's sleepover party last weekend, she requested crepes for breakfast.  I'm a fan of crepes myself but had never actually made them.  It was a bit tricky making them thin but not so big that I couldn't flip them.  If I had an extra-large spatula, it would have helped.  They ended up a bit thicker than the way the French make them but the kids were kind and licked their plates clean.

1 cup all-purpose flour

2 eggs

1/2 cup milk

1/2 cup water

1/4 tsp salt

2 Tbsp melted butter

1.  Whisk together flour and eggs.  Gradually add the milk and water until combined.  Add salt and butter and beat until smooth. 

2.  Heat a lightly oiled frying pan over medium high heat.  Pour 1/4 cup of the batter into the pan and tilt the pan to evenly distribute. 

3.  Cook for about 2 minutes per side. 

4.  Top with Nutella, powdered sugar and a squeeze of lemon, or jam.
