Cinnamon Waffles with Grilled Pear

I don't want to say this and jinx myself but I'm going to risk it and say it anyway.  All three of my kids have been sleeping in until 8am everyday since we've lived in France.  Perhaps, it is just some sort of shift in their schedule due to the drastic time change that took 6 days of jet lag to recover from.  My kids are notoriously early risers.  At home, everyone was always awake by 6:30am.  All three of my kids woke up in the 5am hour between the ages of 1 and 2.  Being a night owl myself, it sucked!

My envy was strong when my friends with children Bijou's age would talk about their 8-year-olds sleeping until 9 or even 10am on the weekends.  What?! When was Bijou going to start this, I wondered. 

Well, my time has come my friends.  Each day I wake up thankful for that full 8-9 hours rest.  It feels good! 

Sleeping in until 8am does require a bit more forward prep to get everyone out the door on time for school.  I lay Bijou's outfits out for the week on Sunday night which she inevitably makes changes to and Doug cooks up a big batch of waffles which will take us through Thursday mornings. 

Cinnamon Waffles

Ingredients

{makes 12} 

2 cups all-purpose flour

2 eggs

1 tsp salt

4 tsp baking powder

2 Tbsp. sugar

1-1/2 c milk

1/3 c vegetable oil or melted butter

1 tsp vanilla extract

1 tsp cinnamon

To Make

Whisk together all of the dry ingredients above.  In a separate bowl, mix together the wet ingredients until well blended. Combine the wet and dry ingredients.  Ladle onto a hot waffle maker and cook until crisp.  Top with grilled pear (recipe follows) and serve.

Grilled Pear

Ingredients

1 pear, diced

1 tsp cinnamon

1 tsp sugar

pat of butter

To Make

Melt the butter over medium heat in a pan. Add the pear and sprinkle with the cinnamon and sugar and sauté for 4-5 minutes.
